A little secret by the pool of the Conrad hotel. Kabana is a poolside restaurant with a twist. It is fully covered and part of the main building and yet completely open to the lush gardens and pool on the wellness floor of the hotel. Seating is casual and comfortable on low tables and indeed there are some indoor cabanas where you can lounge on circular sofas. Chef Mandar, a veteran with luxury hotels, tells me that they are going to start live barbecues very soon. This is just a ‘teaser trailer’ of a menu. We chose some of those teaser trailers and sampled some of the more substantial main courses which are going to be added soon. Salads and appetizers were all pretty perfect – a bowl of kothimbir wadi with spiced makrana (lotus puffs); a delicious quinoa and cous cous chaat; Italian creamy burrata cheese with tomatoes and an ode to Andhra – kozi chimli, a tasty crispy fried chicken with the flavours of chicken 65 but without all the masala. Lots of nice little details like the Arugula salad which is made with wild arugula leaves and the Caesar salad made with chicken tikka or regular roast chicken. New to the menu are hand-made sausages from Farmland Foods in Delhi. We also had a melt in the mouth lamb shank which had been slow cooked for three hours on a bed of divine jus and creamy polenta. Conrad has an excellent patissier in-house so the desserts are predictably excellent.

I urge you to try this little gem; an excellent option for a girls day out. You can couple it with a signature spa treatment next door or a swim and then come here for a healthy and indulgent lunch. Don’t miss the white and red sangrias.
